8. The Nuclear Daiquiri!

The Nuclear Daiquiri is one of the modern cocktail world’s true cult classics — loud, sharp, boozy and built almost entirely for bartenders rather than casual drinkers.

The drink was created in 2005 by Gregor de Gruyther at Lab Bar during the early years of the modern cocktail boom. Bartenders at the time were experimenting heavily with bold flavours, forgotten ingredients and high-proof spirits.

The Nuclear Daiquiri took the classic daiquiri formula and pushed it into chaos in the best possible way.

The original recipe combined:

Overproof white rum (Fire Cane), Fresh lime juice, Green Chartreuse & Falernum 

The result was bright green, intensely herbal, spicy, sour and seriously strong. The “Nuclear” name came from both the radioactive colour and the explosive flavour profile.

What made the drink so popular amongst hospitality staff was how perfectly it matched bartender drinking culture:

·        Strong spirits 

·        Big flavours 

·        Fast to make 

·        Minimal ingredients 

The drink cuts through palate fatigue. After a long night around sugary cocktails, beer and food, bartenders often crave something sharp, dry, spicy and high proof. The Nuclear Daiquiri hits all those notes at once.

It also became a bit of an industry handshake. Ordering one usually tells the bartender you either work in hospitality or spend a lot of time in serious cocktail bars.

The cocktail helped introduce a lot of bartenders to falernum outside of tiki drinks too. In a Nuclear Daiquiri, falernum adds spice, ginger and tropical citrus notes while softening the intensity of the rum and Chartreuse. That influence still carries through modern daiquiris, margaritas and tropical cocktails today.

More than anything, the Nuclear Daiquiri represents a shift in modern cocktail culture — when drinks became bolder, weirder and less focused on playing it safe. Nearly 20 years later, it’s still one of the most recognisable bartender drinks in the world.


Nuclear Daiquiri Recipe (LORD BYRON STYLE)

Glass: Short Coupe

Method: Shake and double strain

30mls Fire Cane (white rum)

30mls lime juice

30mls Falernum (Lord Byron’s)

15mls Green Chartreuse 

Add to a tin with cubed ice and hard shake.

Double strain. No Ganish.
