Australia’s First Pure Single Rum Based Falernum

A tropical cocktail staple with a proper Byron Bay twist.

At Lord Byron Distillery, we love taking old-school classics and giving them our own spin. We are passionate about producing worldclass spirits here in the Northern Rivers of NSW. That’s why our Falernum is inspired by traditional Caribbean recipes but built around something uniquely Australian — our very own award-winning Pure Single Rum.
The result? A smooth, citrusy, lightly spiced tropical liqueur that’s become a favourite for bartenders and home cocktail lovers chasing something a little different behind the bar.

Whether you’re mixing tiki drinks, Daiquiris, Margaritas or just experimenting at home, Falernum is one of those ingredients that instantly makes cocktails more interesting.



So… What Actually Is Falernum?

Falernum is a classic Caribbean spiced liqueur that’s been used in tropical and tiki cocktails for decades.
Traditionally, it’s made using flavours like:
  • Lime 
  • Ginger 
  • Clove 
  • Almond 
  • Cane sugar 
The flavour sits somewhere between citrusy, spicy, sweet and nutty — all at once.
It adds warmth, texture and tropical depth to cocktails without overpowering the spirit underneath. That’s why it’s become a cult favourite in rum bars and cocktail bars around the world.


Our Falernum made with our award winning Pure Single Rum

Most falernum's use neutral spirit as a base. We decided to do things differently.
Our Falernum is built on our own Pure Single Rum, which gives it a richer texture, more depth, and a smoother finish than traditional styles.

Each botanical — clove, ginger, lime and almond — is distilled individually before being blended back together with our rum and cane syrup.

The final result is a low-alcohol (12%) tropical liqueur that works beautifully in cocktails while still bringing plenty of character on its own.

It’s a small twist on a Caribbean classic, but one that gives Australian bars and rum lovers something genuinely unique.


Falernum, your Missing Cocktail Ingredient

Falernum is one of the easiest ways to level up your cocktails.
Just a small splash can completely change a drink by adding tropical citrus, a warming spice, sweetness, texture & extra depth!

It works especially well in:
Daiquiri & Sours
Swap out simple syrup for Falernum and suddenly your basic sour has way more personality.
Margarita
A tropical alternative to triple sec or Cointreau that adds spice and complexity.
Old Fashioned
Adds warmth, citrus lift and a silky spiced finish.
Tiki Drinks
Honestly… this is where Falernum belongs. Tropical cocktails and Falernum go hand in hand.

Why Use Falernum Instead of Cointreau in your Margarita?

Cointreau is bright, clean and reliable — but Falernum brings a whole lot more personality to a drink.
Instead of just orange sweetness, you get a more complex drink. In a Margarita, Falernum creates something softer, richer and more layered. Less sharp. More rounded. More interesting.
It takes a familiar cocktail and gives it a completely different energy without making it complicated.


A Rum Lover’s Cocktail — The Corn ’n Oil

The Corn 'n' Oil is one of the great classic Caribbean rum drinks.
Simple, bold, and entirely built around the quality of the rum. Think of it like the rum world’s version of an Old Fashioned.

Recipe
60ml Lord Byron Premium Blend Rum 
20ml Falernum 
15ml fresh lime juice 
3 dashes aromatic bitters 

Method
Build over ice in a rocks glass and stir briefly.
Top with more ice and garnish with a lime wedge.
Rich rum, citrus, spice and bitters — ridiculously easy drinking.


Cali Margarita with Falernum

A simple tropical riff on a classic Margarita.

Recipe
50–60ml tequila 
25ml Falernum 
25ml fresh lime juice 
Shake with ice and serve over fresh ice or straight up.
From there, you can play around with:
agave syrup 
spicy salt rims 
different tequilas 
extra citrus 
Simple, flexible and seriously delicious.
