We are one of a small, passionate group of artisan distillers from around the globe dedicated to reintroducing real rum to the world.
Aged for 6 years and crafted entirely onsite in Byron Bay, this molasses-based pure single rum began its life in the Northern Rivers 2019 sugarcane harvest. After four years in ex-bourbon it was transferred into ex-Pedro Ximénez sherry casks for two more—building deep layers of dried fruit, raisin, spice and velvety richness. It’s a complex, character-driven rum that made a strong impression on the Sydney Royal judges and continues to showcase why Lord Byron Distillery remains one of Australia’s most respected craft rum producers.
Tasting notes from Head Distiller, Kris Restall:
• Nose: Sweet raspberry lollies, vanilla, and charred oak.
• Palate: Soft and creamy, unfolding into raisins and bold vanilla.
• Finish: Long, warm, and indulgent with caramel and rich chocolate.
We are the first Australian Rum distillery to release Pure Single Rum under the internationally recognised Gargano classification system. Our artisan distillers hand make our own ferment from local molasses and filtered spring water, prior to it being double batch distilled in pot stills. We mature our premium Rums in quality oak casks, not vats, in the region where the cane was grown. All this takes time and costs more, but we believe this is the only way Rum should be made.
