We are one of a small, passionate group of artisan distillers from around the globe dedicated to reintroducing real rum to the world.
Matured for four years in ex-bourbon barrels before a further three-month finish in ex-Belgian blonde beer casks from our friends at Common People Brewing Co., this rum represents a unique collaboration between two Northern Rivers craft producers. The beer-seasoned oak adds a delicate layer of floral, malt and spice complexity, complementing the rich bourbon influence while allowing the character of the Pure Single Rum to shine.
The nose is light and inviting, with aromas of bourbon oak, apricot and soft honey, lifted by subtle floral notes and hints of vanilla from the cask. The palate opens with a bold bourbon-barrel character before evolving into honeycomb sweetness with a gentle waxy richness. Layers of cedar, caramelised apricot, ripe banana and nougat develop alongside soft malt notes from the Belgian blonde cask, while long, drying tannins provide depth, balance and structure.
The finish is refined and lingering, carrying notes of soft nougat, warm white toast and delicate oak spice long after the final sip

We are the first Australian Rum distillery to release Pure Single Rum under the internationally recognised Gargano classification system. Our artisan distillers hand make our own ferment from local molasses and filtered spring water, prior to it being double batch distilled in pot stills. We mature our premium Rums in quality oak casks, not vats, in the region where the cane was grown. All this takes time and costs more, but we believe this is the only way Rum should be made.
You will taste the difference. This is the Spirit of Byron.
