Aged for over 4 years, the latest release in our Exceptional Cask Series is a rum of remarkable depth and character.

We are one of a small, passionate group of artisan distillers from around the globe dedicated to reintroducing real Rum to the world.  

This pure single rum is from 2021 cane harvest molasses that has been double pot distilled and matured in a single ex-bourbon cask from June 2021 to December 2025.   This is a numbered release, bottled at cask strength in 2025.  

Tasting notes from the distilling team:

"The nose opens with white pepper, honeycomb, and vanilla, unfolding into layers of burnt caramel, chocolate, and gently toasted oak. Sweet citrus and subtle banana notes add brightness and complexity. On the palate, marmalade, apricot, hint of maple and bourbon spice glide across a full-bodied, silky texture.  It finishes long and graceful with subtle chocolate, lingering oak, honeycomb, and gentle a warming spice."

We are the first Australian Rum distillery to release Pure Single Rum under the internationally recognised Gargano classification system. Our artisan distillers hand make our own ferment from local molasses and filtered spring water, prior to it being double batch distilled in pot stills. We mature our premium Rums in quality oak casks, not vats, in the region where the cane was grown. All this takes time and costs more, but we believe this is the only way Rum should be made.
